Lemon pancakes
12 pancakes, 4 servings
Ingredients
- 100 mL milk
- 4 tbsp yoghurt
- 1 tsp vanilla extract
- 80mL maple syrup
- 2 tbsp vegetable oil
- 1 lemon
- 200 g flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tbsp poppy seeds
Recipe
- Zest the lemon and juice.
- Mix dry ingredients.
- Stir in wet ingredients (including zest and lemon juice) until thick.
- Heat and oil a pan.
- Drop batter 1/4 cup at a time.
- Top with more yoghurt and maple syrup.
