Lemon pancakes

12 pancakes, 4 servings

Ingredients

  • 100 mL milk
  • 4 tbsp yoghurt
  • 1 tsp vanilla extract
  • 80mL maple syrup
  • 2 tbsp vegetable oil
  • 1 lemon
  • 200 g flour 
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tbsp poppy seeds

Recipe

  1. Zest the lemon and juice.
  2. Mix dry ingredients.
  3. Stir in wet ingredients (including zest and lemon juice) until thick.
  4. Heat and oil a pan.
  5. Drop batter 1/4 cup at a time.
  6. Top with more yoghurt and maple syrup.
