Fluffy pancakes

- 20/02/2021: I don’t know if I didn’t fold the egg whites in properly, but it fell somewhat flat, and made normally flat pancakes.
Ingredients
- 1 cup flour
- 1 tbsp baking powder
- 1 cup milk
- 3 egg yolks
- 3 egg whites
Recipe
- In a medium bowl, combine flour and baking powder. Stir in milk and egg yolk until smooth.
- Separately, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in rest.
- Heat an oiled pan (medium high). Scoop 1/4 cup batter at a time. Cook on both sides.
