Grilled Lamb Pitas

Ingredients

Burgers

  • 500 g ground lamb
  • 1 shallot
  • 1-2 garlic clove
  • 1 tbsp fresh dill
  • 2 tsp mediterranean spices (herbes de Provence will do)
  • 4 pitas

Pesto

  • 1 cup mint leaves
  • 1/4 cup pistachios
  • 1/4 cup olive oil

Yoghurt

  • 1/2 cup greek yoghurt
  • 1 tbsp lemon juice
  • dill

Recipe

Burgers

  1. Chop the dill. Meat, herbs and seasoning in a bowl. Grate the shallot and garlic over the meat. Mix with hands.
  2. Make 4 patties. Fridge 30 min-1 hour.
  3. Medium grill. Cook burgers 6-7 min on each side. Rest.
  4. Heat pitas on the grill.

Pesto

  1. Combine mint, pistachios and olive oil in a food processor and pulse. Adjust oil as needed. Season with salt.

Yoghurt

  1. Combine all ingredients and adjust with salt and pepper.
  2. Stuff burgers into pitas, top with pesto and yoghurt sauce.
