Pizza Dough

Bacon blue cheese pizza

We make this pizza dough recipe once a week to once a month. I now make it with pizza flour which has higher gluten content so I can stretch the dough better, and I roll it out by hand by stretching then flipping from hand to hand, but the regular flour and regular rolling out makes for a great pizza too. I no longer brush the sides with olive oil to simplify. The proportions are good, 1/3 of the recipe for 2 people makes an ample dinner.

The third is better with 70% water if there’s real pizza flour. 180g flour, 126g water, 1tsp yeast, 1/2 tsp sea salt, 1 tsp olive oil, 1 tsp honey, 1/2 cup lukewarm water.

Ingredients

  • 3 3/4 cup (556 g) whole-wheat flour (I try to use high protein content)
  • 1 tbsp instant yeast
  • 1 1/2 tsp fine salt
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 1/2 cup lukewarm water

Recipe

  1. Mix the flour, yeast and salt. Gradually add the water with the honey and oil and mix with the dough hook (much nicer than by hand)
  2. Transfer to a bowl, cover with plastic wrap and let grow at room temperature for 1 1/2 hours, or in the fridge overnight.
  3. Split the dough in 3, take the four corners and fold towards the center. Roll into a ball, let rest for 30 minutes. There the dough can be wrapped in plastic, refrigerated for 3 days or frozen for up to a month.
  4. Roll out on a floured surface (by stretching and throwing between hands, look up a youtube video), top with toppings. Bake if possible on a hot stone or in a pan in the oven at 250 °C for 10 to 15 minutes.
  • Tips: we preheat the oven with either a cast iron stone or a oven-proof pan for 30 min while the dough rests, so that the pizza bakes in on nice hot surface. We preheat and bake at 250 °C, but the pizza (especially after the first) needs to be careful watched to not over cook.

    Topping ideas:
  • tomato sauce + apple slices + bacon + blue cheese + maple syrup drizzle (absolutely amazing)
  • tomato sauce + grated cheese + pepperoni (classic and great)
  • tomato sauce + mozzarella (added in the last few minutes) + basil
  • tomato sauce + smoked cheese
