– 23/01/2020: made with really bread flour. Very soggy, not coming together. Did not rise at room temp. Left in the fridge overnight. Still falling apart but somehow baked super nice.
– 20/02/2020: made with 3 cups bread flour, + 1/2 cup spelt flour. Made two small loafs, baked 20 min at 250C with lid on, 10 min with lid off: very good!
Ingredients
- 3 cups flour (+1/2 cup interesting flour in recent versions)
- 2 tsp salt
- 1/2 tsp dry yeast
- 1 1/2 cup warm water
- toppings: 1/2 cup chopped olives, 1 sprig of rosemary, a couple garlic cloves roasted in the oven, walnuts, dried figs
Recipe
- Mix the dry ingredients, pour the water. Knead with machine.
- Cover with plastic and leave in the fridge overnight.
- Turn on the oven 230 °C and place a dutch oven or a closed pot in there.
- Add the toppings and mix in the dough. Form into a round loaf, dust with flour, leave for 30 minutes.
- Put the loaf in the pot, bake for 30 minutes, remove the lid, bake for 15 minutes more.
- It should make a hollow sound when topped or be at 85 °C/90 °C inside with a thermometer.
- Works well to make two small breads too
