Coffee Cake

Ingredients

Crumb topping

  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 3/4 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 cup (113 g) butter, melted
  • 1 3/4 cups cake flour (1 cup = 1 cup flour + 2 tbsp cornstarch)

Cake

  • 1/4 cup cake flour
  • 1/2 cup sugar
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp (84 g) cut into pieces, softened
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/3 cup buttermilk or yoghurt

Recipe

Cake

  1. Oven: 325 °F = 163 °C
  2. Mix the flour, sugar, baking soda, salt on low speed. Add butter in pieces, beat until mixture resembles crumbs.
  3. Add egg and egg yolk, vanilla extract, buttermilk, mix until it has incorporated.
  4. Butter and flour the loaf pan. Pour the batter.

Crumb topping

  1. Whisk sugars, cinnamon, salt. Melt the butter and pour it over, mix. Add the flour and make a thick dough.
  2. Sprinkle over the loaf.
  3. Bake for ? minutes.
