Ingredients
Crumb topping
- 1/3 cup sugar
- 1/3 cup brown sugar
- 3/4 tsp cinnamon
- 1/8 tsp salt
- 1/2 cup (113 g) butter, melted
- 1 3/4 cups cake flour (1 cup = 1 cup flour + 2 tbsp cornstarch)
Cake
- 1/4 cup cake flour
- 1/2 cup sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 6 tbsp (84 g) cut into pieces, softened
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1/3 cup buttermilk or yoghurt

Cake
- Oven: 325 °F = 163 °C
- Mix the flour, sugar, baking soda, salt on low speed. Add butter in pieces, beat until mixture resembles crumbs.
- Add egg and egg yolk, vanilla extract, buttermilk, mix until it has incorporated.
- Butter and flour the loaf pan. Pour the batter.
Crumb topping
- Whisk sugars, cinnamon, salt. Melt the butter and pour it over, mix. Add the flour and make a thick dough.
- Sprinkle over the loaf.
- Bake for ? minutes.
