Cranberry almond salad

Ingredients

Almonds

  • 3/4 cups (1 pound 450 g) sliced almonds
  • 2 tsp sugar
  • 1 1/2 tsp (7 g) butter
  • 1/3 tsp cinnamon
  • 1/6 tsp cumin
  • 1/4 tsp smoked paprika
  • salt

Salad

  • 12 ounces (340 g) baby spinach
  • 2 avocados
  • ¾ cup cranberries
  • ¾ cup candied almonds
  • goat cheese

Dressing

  • 1 tbsp sugar
  • 1 tsp poppy seeds
  • 1 tsp sesame seeds
  • 1/8 tsp paprika
  • 1/8 tsp mustard
  • 1/2 tsp minced onion
  • pinch salt and pepper
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp vegetable oil
  • 1 tbsp olive oil

Recipe

Almonds

  1. Melt sugar in a pan until caramelized.
  2. Lower heat, add butter and spices, stir.
  3. Add almonds. Stir regularly until almonds are browned.
  4. Put to cool on a baking mat, sprinkle with sea salt.

Dressing

  1. Combine all ingredients in a glass jar and shake

Salad

  1. Wash and cut the salad.
  2. Slice the avocado. Mix in a bowl with salad.
  3. Add the cranberries and the almonds.
  4. Crumble the goat cheese.
  5. Add sauce, toss.
