2 servings (I found that 2.5 potatoes was too much for me as a side)
Ingredients
- 3 tbsp (42 g) butter, melted
- 3 tbsp olive oil
- 12 potatoes
- 1 small onion or 4 shallots
- 4 – 6 thyme sprigs
- 3 ounces (85 g) bacon cubes
Recipe
- Oven: 375 °F = 190 °C.
- Combine oil and butter.
- Brush a baking dish with a bit of this mixture.
- Peel and slice the potatoes as thin as possible, without going fully through. Put in the baking dish.
- Slice onion/shallots very thin, but between potato slices.
- Sprinkle with salt and pepper. Brush with some of the oil-butter mixture.
- Cover with foil. Bake for 30 min. Brush with oil-butter mixture. Bake for 1h (basting can be done regularly).
- Cook bacon cubes in pan.
- Add on potatoes lay the thyme sprigs on top.
- Bake for 35 minutes.

- I found that 2.5 potatoes was too much for me.
- It really needs at least 1h30, and maybe some grilling at the end.
