Cinnamon pull-apart bread

Ingredients

Dough

  • 3 cups + 1 1/2 tbs (375 g) flour
  • 1/4 cup (50 g) sugar
  • 1/2 tsp salt
  • 1/4 cup (60 ml) warm water
  • 2 1/4 tsp yeast
  • 1/3 cup (80 ml) milk
  • 3 tbsp (40 g) butter, melted
  • 2 eggs (room T°)
  • 1 tsp vanilla extract

Filling

  • 1/2 cup (100 g) sugar
  • 2 tsp cinnamon
  • 2 tbsp (30 g) butter, melted

Recipe

Dough

  1. Mix yeast with water, cover, rise 5 min.
  2. Melt the butter, add the milk, vanilla extract.
  3. Mix 2 cups + 2tbsp (260 g) flour, sugar and salt. Pour in all wet ingredients. Mix for 2 minutes.
  4. Add eggs one by one. Add 3/4 cup + 1 tbsp (100 g), mix until smooth (very sticky). Cover, rise 1 hour.

Filling

  1. Whisk sugar and cinnamon for the filling.
  2. Grease and flour a cake pan.
  3. Knead the dough until smooth (1 min). Rest 5 min.
  4. Roll the dough into a rectangle 12×20 inches (30×50 cm).
  5. Brush with the melted butter and sprinkle the cinnamon-sugar mixture.
  6. Slice the dough 6×6 squares.
  7. Layer the squares in the loaf pan, rise for 30-45 minutes.
  8. Oven: 350 °F = 175 °C.
  9. Bake for 35 min.
