Rosemary goat cheese biscuits

Ingredients

  • 2 cups flour
  • 1 tbsp + 1 tsp baking powder
  • 2 tbsp sugar
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp (42 g) butter, very cold
  • 1/4 cup rosemary
  • 6 ounces (170 g) fresh goat cheese
  • 1 cup + 4 tbsp cream

Recipe

  1. Oven: 400 °F = 190 °C.
  2. Combine flour, baking powder, sugar, salt, pepper. Grate butter and rub it in.
  3. Chop rosemary, add to preparation with goat cheese crumbled and 1 cup + 3 tbsp cream.
  4. Stir with a fork into a sticky ball.
  5. Knead 6-7 times.
  6. Roll out to 1 inch thickness. Cut rounds.
  7. Brush biscuits with 1 tbsp cream.
  8. Bake 20 min.

Experience

  • 20/10/2020: put 1+ cup of sourdough instead of cream. put both goat cheese and emmental. put both chives and rosemary. very tasty.
  • 25/10/2020: put only 1 cup flour. 1/4 cup + 1tbsp sourdough instead of cream. both emmental and lebaneh, both chives and rosemary.
  • 09/11/2020: 1.5 cup flour. 265g sourdough instead of cream. Emmental and goat cheese. Only chives. It wasn’t great, dry and lacked flavour.
