Cinnamon swirl bread

Ingredients

  • 1/3 cup sugar
  • 1 tbsp cinnamon
  • 1/4 cup (56 g) butter, melted
  • 1 egg
  • 1 cup brown sugar
  • 1/4 cup canola oil
  • 1 tbsp vanilla extract
  • 1 cup buttermilk
  • 2 cups flour
  • 1 tsp nutmeg
  • 3/4 tsp baking soda

Recipe

  1. Oven: 350 °F = 180 °C.
  2. Butter and flour a cake pan.
  3. Mix butter, egg, brown sugar, oil, vanilla.
  4. Add buttermilk.
  5. Add flour, nutmeg, baking soda, salt (optional) and mix.
  6. Pour half of the batter in the pan.
  7. Mix the white sugar and cinnamon. Sprinkle most of it on the batter by hand.
  8. Pour rest of the batter. Sprinkle rest of cinnamon-sugar by hand.
  9. Bake for 55 min.

Experience

  • 25/09/2020: the dough was quite liquid, with flour lumps, but it cooked fine. the sugar was sprinkled by hand. 45 min, could have stayed a bit longer, but with aluminium foil for the last 10-15 min
