Ingredients

  • 1 1/2 cups (245 g) cornmeal
  • 1 1/2 cups (355 mL) buttermilk
  • 1 1/2 cups (212 g) flour 
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 8 tbsp (226 g) butter, melted
  • 8 oz (227 g) unsweetened applesauce
  • 1/4 cup – 1/2 cup (50-100 g) sugar
  • 3 tbsp (45 mL) honey
  • 3 eggs

Recipe

  1. Mix cornmeal and buttermilk, rest 30 min (room T°).
  2. Oven: 375 °F = 190 °C.
  3. Butter and flour a square pan.
  4. Add butter, applesauce, sugar, honey, eggs to cornmeal mixture.
  5. Stir in flour, baking powder, baking soda, salt.
  6. Bake 23-30 min.
