07/11/2022: I don’t love that recipe. I don’t think the pumpkin sauce brings much, it makes it a bit heavy and blend taste wise… Just make a regular carbonara! it will have better taste.
Ingredients
- 1 butternut squash (1 1/2 lbs, 680 g)
- 2 tbsp olive oil
- 1/2 lb. (225 g) bacon cubes
- 1 onion
- 1 lb. (450 g) pasta
- 1/4 cup cream
- 1 tbsp butter
- 1 small bunch sage
Recipe
- Oven: 375 °F = 190 °C.
- Peel and chop butternut squash. Place on a baking sheet and drizzle with the olive oil, then sprinkle with salt and pepper. Coat. Cook 20-25 min.
- Fry bacon. Put aside.
- Slice onion into half moons. Cook 15 min.
- Cook the pasta.
- Blend butternut squash, 1 cup pasta water, 1/4 cup cream.
- Toss fettuccine and squash puree.
- Fry sage in 1 tbsp butter.
- Serve pasta topped with caramelized onions, bacon cubes, fried sage.
