Pumpkin carbonara

07/11/2022: I don’t love that recipe. I don’t think the pumpkin sauce brings much, it makes it a bit heavy and blend taste wise… Just make a regular carbonara! it will have better taste.

Ingredients

  • 1 butternut squash (1 1/2 lbs, 680 g)
  • 2 tbsp olive oil
  • 1/2 lb. (225 g) bacon cubes
  • 1 onion
  • 1 lb. (450 g) pasta
  • 1/4 cup cream
  • 1 tbsp butter
  • 1 small bunch sage

Recipe

  1. Oven: 375 °F = 190 °C.
  2. Peel and chop butternut squash. Place on a baking sheet and drizzle with the olive oil, then sprinkle with salt and pepper. Coat. Cook 20-25 min.
  3. Fry bacon. Put aside.
  4. Slice onion into half moons. Cook 15 min.
  5. Cook the pasta.
  6. Blend butternut squash, 1 cup pasta water, 1/4 cup cream.
  7. Toss fettuccine and squash puree.
  8. Fry sage in 1 tbsp butter.
  9. Serve pasta topped with caramelized onions, bacon cubes, fried sage.
