Café du Monde beignets

  • 01/03/2021: made half a batch for the lab and Purim. It was more than we could eat in 3 days. I didn’t put the sugar because I used sweetened condensed milk and not condensed. The dough was hard to roll that thin and I found the beignets a bit flavorless and poufff. Like heavy. Maybe try with sugar, or maybe avoid beignets altogether because that’s the kind of food they are.

Ingredients

  • 2 1/4 tsp dry yeast
  • 1 1/2 cup warm water
  • 1/2 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 1 cup evaporated milk
  • 7 cup flour
  • 1/4 cup vegetable shortening
  • oil for deep frying
  • powdered sugar

Recipe

  1. Mix warm water, yeast, sugar, salt, eggs, evaporated milk.
  2. Gradually add 4 cups of flour.
  3. Add shortening, then remaining flour.
  4. Cover and refrigerate overnight.
  5. Roll the dough to 1/8 inch thickness. Cut rectangles (2 1/2 inches by 3 1/2 inches).
  6. Heat oil to 360 °F = 180 °C. Fry beignets about 1-2 min per side. Lay on paper towel.
  7. Coat with powdered sugar.
