Coconut roti

  • 20/10/2021: 1/2 of the recipe made 4 rotis, a little too much for 2 persons. I had to add a few more tbsp of water so the dough held together. I rolled them thin and cooked them on hot, on the cast iron pan. The very hot was good, but maybe they could have been a bit thicker so they would be smoother inside, and not so crisp.

8 rotis

Ingredients

  • 2 cups flour
  • 1 cup grated coconut
  • 1 tsp salt
  • 3/4 cup water

Recipe

  1. Knead all the ingredients for 5 min.
  2. Rest for 30 min.
  3. Separate into 8 pieces, roll out into circles (5 inches diameter).
  4. Cook in a pan 2 min on each side.
