Lentil Sri Lankan curry

Ingredients

  • 450 g red split lentils
  • 1 L water
  • 1 tbsp cumin
  • 2 tsp turmeric
  • 250 mL coconut cream
  • 2 tbsp coconut oil
  • 2 onions
  • 4-6 cloves garlic
  • 3 green chillies
  • 2 tsp mustard seeds
  • 2 tsp cumin seeds
  • 2 tsp fennel seeds
  • To serve: fresh coriander

Recipe

  1. Wash and drain lentils until water runs clear.
  2. Boil 1 L of water, add lentils, turmeric, salt to taste and ground cumin.
  3. Boil for 10-15 min until lentils are softened. Stir in the coconut cream and cook 5 min.
  4. Slice the onions and mince the garlic. Chop chillies.
  5. Heat coconut oil in a pan. Fry the seeds shortly, then add onions, garlic, chillies.
  6. Cook for 5-10 min until browned. Season.
  7. Stir onion and spice mix through the lentils.
