Ingredients
- 250 g spinach
- 1 green chili
- 100 mL water
- 1 onion
- 1 tbsp oil
- 1 tbsp garlic
- 1 tsp cumin
- 1 tsp coriander seed powder
- pinch cinnamon
- 1/2 tbsp garam masala
- 1/2 tsp cayenne pepper
- 1 tbsp tomato paste
- 2 tbsp cream
- salt and pepper
- 200 g paneer or feta
Recipe
- Wash spinach. Blanch in boiling water for 30 s.
- Blend with green chili (stem removed) and water until smooth.
- Chop onion and mince garlic.
- Heat oil in pan and fry onion a few min. Add garlic. Then cumin, coriander, cinnamon, garam masala, cayenne.
- Add tomato paste, stir fry. Lower heat.
- Add spinach and mix. Add cream and season to taste. Simmer for 10 min. Add water if necessary.
- Chop paneer into bite-size cubes and add. Cook for 3-5 min.

Experience
- 16/11/2020: the whole chili plus the cayenne pepper makes it very very very spicy. Skip the chili and add chili flakes and cayenne pepper for heat in the last step only.
