Palak paneer

Ingredients

  • 250 g spinach
  • 1 green chili
  • 100 mL water
  • 1 onion
  • 1 tbsp oil
  • 1 tbsp garlic
  • 1 tsp cumin
  • 1 tsp coriander seed powder
  • pinch cinnamon
  • 1/2 tbsp garam masala
  • 1/2 tsp cayenne pepper
  • 1 tbsp tomato paste
  • 2 tbsp cream
  • salt and pepper
  • 200 g paneer or feta

Recipe

  1. Wash spinach. Blanch in boiling water for 30 s.
  2. Blend with green chili (stem removed) and water until smooth.
  3. Chop onion and mince garlic.
  4. Heat oil in pan and fry onion a few min. Add garlic. Then cumin, coriander, cinnamon, garam masala, cayenne.
  5. Add tomato paste, stir fry. Lower heat.
  6. Add spinach and mix. Add cream and season to taste. Simmer for 10 min. Add water if necessary.
  7. Chop paneer into bite-size cubes and add. Cook for 3-5 min.

Experience

  • 16/11/2020: the whole chili plus the cayenne pepper makes it very very very spicy. Skip the chili and add chili flakes and cayenne pepper for heat in the last step only.
