Ingredients

  • 1-2 kg onions
  • 5 cardamoms
  • 1 stick cinnamon
  • 5 tbsp oil
  • 2 tbsp sugar
  • 3 tbsp tamarind paste
  • 5-6 curry leaves
  • 1 pandan leaf
  • chili powder

Recipe

  1. Chop onions in half-rings.
  2. Pan on medium heat. Add cardamoms, cinnamon, leaves, chili powder.
  3. Add onions. Cook for 10 min until caramelized.
  4. Add tamarind and sugar. Season with salt.
  5. Store in jars.
