Black bean burgers

Ingredients

Patties

  • 2 sweet potatoes
  • 1/2 cup quinoa
  • 3 tbsp ground flax seed
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp oregano
  • 1/4 tsp black pepper
  • 15-ounce (425 g) can black beans

Spicy mayonnaise

  • mayonnaise
  • lime juice
  • sriracha sauce
  • garlic powder

Recipe

Patties

  1. Oven: 400 °F = 200 °C.
  2. Half sweet potatoes lengthwise. Poke skin a few times.
  3. Bake 30-35 min.
  4. Rinse quinoa. Simmer in a pot with 1 cup water for 10-15 min. Check regularly, because once it absorbs all the water it will start to burn.
  5. Mix seasoning spices.
  6. Drain black beans. Mash with sweet potatoes until chunky.
  7. Fluff the quinoa and add to mash with spices. Mix well.
  8. For 8 burger patties, 1/3 cup each. Place on a baking paper.
  9. Bake for 20 min, flip, 20 min.

Spicy mayonnaise

  1. Mix ingredients until it doesn’t taste so much like mayonnaise. Can be a little spicy.
  2. Assemble the burgers: Grill bread, spread mayo, add burger, add toppings (no ideal toppings yet found: salad and tomatoes are good), mayonnaise, bread.
