Ingredients
- leftover chicken carcass
- 1 celery rib
- onion
- carrot
- herbs (parsley, or rosemary branch, or thyme branches)
- 1 tsp salt
- 1/4 tsp pepper
Recipe
- Cut celery into 2-inch pieces.
- Peel and cut carrot into 2-inch pieces.
- Quarter onion (unpeeled).
- Put the chicken carcass in a very large pot. Add veggies. Cover with water, add salt and pepper, mix.
- Simmer barely, partially covered for at least 4 hours.
- Filter through a sieve. Drink as a soup or freeze in ice cubes.
