Chicken broth

4-6 cups

Ingredients

  • leftover chicken carcass
  • 1 celery rib
  • onion
  • carrot
  • herbs (parsley, or rosemary branch, or thyme branches)
  • 1 tsp salt
  • 1/4 tsp pepper

Recipe

  1. Cut celery into 2-inch pieces.
  2. Peel and cut carrot into 2-inch pieces.
  3. Quarter onion (unpeeled).
  4. Put the chicken carcass in a very large pot. Add veggies. Cover with water, add salt and pepper, mix.
  5. Simmer barely, partially covered for at least 4 hours.
  6. Filter through a sieve. Drink as a soup or freeze in ice cubes.
