Ingredients
Dressing
- 2 tbsp olive oil
- 1 lemon (1/4 cup juice)
- 2 tbsp water
- 2 tbsp red wine vinegar
- 2 tsp dried basil
- 2 tsp garlic
- 1 tsp oregano
- 1 tsp salt
- 1 pound (500 g) chicken breasts
Salad
- 4 cups lettuce
- 1 cucumber
- 2 tomatoes
- 1 red onion
- 1 avocado
- 1/3 cup black olives
Recipe
- Mince garlic. Juice lemon.
- Whisk the dressing ingredients. Reserve half as dressing, pour half into a dish. Add chicken, marinade for 15-30 min (2 h in friged).
- Heat oil in a pan (medium-high heat). Grill chicken on both sides. Slice.
- Wash and dry lettuce. Dice cucumber and tomatoes. Slice red onion, avocado and black olives.
- Mix all the salad ingredients with dressing.
