Ingredients
- 2 pie crusts (buy them)
- 7-8 apples
- 1/2 cup (113 g) butter
- 3 tbsp flour
- 1/4 cup water
- 1/2 cup white sugar (can be halved)
- 1/2 cup brown sugar (can be halved)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla
Recipe
- Peel and cube apples.
- Oven: 425 °F = 218 °C.
- In a pan, melt butter (medium heat). Add flour and mix.
- Add water, sugars, cinnamon, nutmeg, and vanilla. Bring to a boil for 1 minute, then simmer for a minute.
- Remove from heat. (Put aside 1/3 cup, or use all if you don’t want to brush the pie with this).
- Mix remaining filling with apples. Toss.
- Lie pie crust in a pie pan. Pour apples in.
- Cut second pie crust into strips.
- Make lattice design above the pie. (Brush with the rest of the filling, or skip).
- Cover the pie with aluminium (buttered maybe to not stick to the pie).
- Bake for 10-12 min.
- Reduce heat to 350 °F = 176 °C. Bake for 50 min (foil can be removed in the last 10 min).

notes on the recipe:
half these quantities gave me 8 mini-pies, 4 apples were more than enough. I halved the sugar (ie 1/4 of the original recipe), and the caramel was chunky. Last time is was super sticky, in any case it’s not useful to brush the pie.
