I made this quite a few times, and the dressing needs to be doubled. The sauce is the best part, the rest can feel too dry and raw. not sure how to improve it.
Ingredients
Salad
- 1 red bell pepper
- 1 cup carrots
- ½ head of red cabbage
- 1 (15 ounce = 425 g) can chickpeas
- ½ cup cilantro
- ¼ cup green onion
- ¼ cup cashews
Dressing
- 4 tbsp peanut butter
- 1 tbsp grated ginger
- 2 clove garlic
- 2 tsp apple cider vinegar
- 2 tsp curry powder
- 1/2 tsp cayenne pepper
- 1/2 tsp turmeric
- salt and pepper
- 2-3 tbsp warm water (as wanted)
Recipe
- Chop pepper, cabbage, green onion, cilantro, jalapeno. Grate carrot.
- Make dressing: grate ginger, mince garlic. Mix all ingredients, don’t add water unless the taste is too powerful.
- Roast cashews. Top salad with that.
