Ingredients
- 3 sweet potatoes
- 2 tbsp oil
- ½ cup pecans
- 1 tsp smoked paprika
- 1 tsp dried herbs
- ½ tsp salt
- ¼ tsp pepper
- 1 cup quinoa
- 2 cups water
- 2 avocados
- (4 hard-boiled eggs, optional)
Chipotle peach sauce
- ½ cup mayonnaise
- 2 tablespoons peach puree
- 4 teaspoons chipotle (or sriracha) sauce
Recipe
- Oven: 400 °F = 200°C.
- Peel, rinse and chop sweet potatoes into 1-inch cubes.
- Blend pecans, smoked paprika, herbs, salt and pepper, crumbles.
- Toss sweet potatoes with oil and pecan mixture.
- Roast for 20-25 min.
- Simmer 2 cups water + 1 cup quinoa fo 15-20 min. Stir and make sure all water doesn’t evaporate.
- Make sauce.
- Chop avocado. Hard boil eggs if wanted.
- Mix everything.
