Sweet potato bowl

Ingredients

  • 3 sweet potatoes
  • 2 tbsp oil
  • ½ cup pecans
  • 1 tsp smoked paprika
  • 1 tsp dried herbs
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup quinoa
  • 2 cups water
  • 2 avocados
  • (4 hard-boiled eggs, optional)

Chipotle peach sauce

  • ½ cup mayonnaise
  • 2 tablespoons peach puree
  • 4 teaspoons chipotle (or sriracha) sauce

Recipe

  1. Oven: 400 °F = 200°C.
  2. Peel, rinse and chop sweet potatoes into 1-inch cubes.
  3. Blend pecans, smoked paprika, herbs, salt and pepper, crumbles.
  4. Toss sweet potatoes with oil and pecan mixture.
  5. Roast for 20-25 min.
  6. Simmer 2 cups water + 1 cup quinoa fo 15-20 min. Stir and make sure all water doesn’t evaporate.
  7. Make sauce.
  8. Chop avocado. Hard boil eggs if wanted.
  9. Mix everything.
