Burger buns

Ingredients

  • 1 cup warm water
  • 3 tbsp warm milk
  • 2 tsp dry yeast
  • 2 1/2 tbsp white sugar
  • 1 egg, beaten
  • 3 cups bread flour
  • 1/3 cup flour
  • 1 1/2 tsp fine salt
  • 2 1/2 tbsp butter, room T°

Egg wash

  • 1 egg
  • 1 tbsp water

Recipe

  1. Mix bread flour, normal flour, salt. Crumble butter into the flour.
  2. Add yeast, water, milk, sugar, egg.
  3. Knead (with machine) 5-7 min (moist, not sticky).
  4. Cover and rise until doubled 1-2 h.
  5. Divide into 8 balls (weigh it). Place on baking sheet, cover loosely, rise until doubled (1-2 h).
  6. Oven: 400 °F = 200 °C.
  7. Pan of water at the bottom.
  8. Beat egg with 1 tbsp water. Brush, sprinkle sesame, poppy seeds or whatever.
  9. Bake 15 min, turning halfway.
