Roasted veggies (for bagels)

Ingredients

  • 2 parsnips
  • 4 sprigs of rosemary
  • 2 carrots
  • 2 red beets
  • or: zucchini, aubergine, red pepper
  • 8 tbsp olive oil
  • 4 tsp honey
  • salt and pepper

Recipe

  1. Oven: 170 °C.
  2. Cut veggies into strips (with a peeler or a machine).
  3. Toss veggies with olive oil, honey, salt and pepper, rosemary.
  4. Bake for 15 min at least.
  5. Freeze in batches.
