Sandwich bread

Ingredients

  • 1 1/3 cups flour (205 g)
  • 1 1/2 tsp instant yeast (4-5 g)
  • 2 tsp sugar (9-10 g)
  • 10 g butter, melted
  • 1 1/3 cups milk (242 g, 237 mL)
  • 2 cups bread flour (264 g)
  • 1 1/2 tsp salt (8 g)

Recipe

  1. Melt butter in the milk, heating it on low heat for a bit.
  2. With a mixer, combine 1 1/3 cup flour (205 g), instant yeast, sugar.
  3. Mix in milk and butter.
  4. Add 1 1/3 cup bread flour (176 g) until dough comes together.
  5. Cover and rest for 20 min.
  6. Add the salt and 1/3 (44 g) -2/3 (88 g) cups of bread flour depending on consistency. Knead with machine for a couple minutes.
  7. Dust a large bowl with flour. Place the dough in and cover the top with flour.
  8. Cover and rise until doubled, for 1-2 h.
  9. Dump onto a floured surface, flatten, shape into a loaf.
  10. Grease a loaf pan. Place dough seam side down, dust with flour.
  11. Cover and rise for 40-60 min.
  12. Oven: 375 °F = 190 °C.
  13. Bake for 35-40 minutes. Golden brown, inner temperature is 93 °C.

Experience

  • Made it a bunch of times, turns out good always.
  • 18/11/2020: 1/3 cup of bread flour added only, and it seemed like too much.
