Salmon with Creamy Leeks

  • made this once for Laura and Josh, then on 09/09/2021 for date night. It’s super good. Matt loves the creamy leeks more than anything. This makes 2 very generous leek portions, could easily be for 3 persons, maybe it’s not enough for 4.

Ingredients

  • 3 tbsp (42 g) butter
  • 3 leeks
  • 1/3 cup white wine
  • 1/3 cup heavy cream
  • 2 tbsp chives
  • 1/4 cup chicken stock
  • 2 salmon fillets, skin on

Recipe

  1. Cut white and light-green parts of leeks in 1/2 inch rounds, so somewhat large, wash well.
  2. Melt butter in a pot. Add leeks, simmer, stirring, 5 minutes.
  3. Add wine, simmer until leeks are tender, another 5-10 minutes.
  4. Meanwhile chop chives.
  5. Add cream and chives. Simmer. Season (salt and pepper).
  6. Stop cooking. Pour half into a blender, add chicken stock, blend until smooth, 5 minutes (for extra-refinement, it can be passed through a sieve to get rid of all the stringy bits).
  7. Heat some olive oil in a pan. Season salmon on both sides with salt and pepper.
  8. Salmon skin side down in pan. Cook 5 minutes, until well browned under. Flip, cook another 4 minutes. Check that it’s no longer raw in the center, barely pink.
  9. Mix blended and non-blended leeks, serve over salmon.
