Ingredients
- 2 tbsp olive oil
- 1 shallot
- 8 ounces (227 g) chanterelles (or other mushrooms)
- 12 slices of bread
- 12 slices aged goat cheese
- chives
Recipe
- Slice shallot in rings.
- Heat olive oil on medium.
- Cook shallots for 3 minutes (soft).
- Add mushrooms, cook for 7-10 minutes (juices evaporated).
- Season with salt and pepper.
- Toast crostinis.
- Top with goat cheese, add mushroom mixture, sprinkle with chives.
