Mushroom crostinis

Ingredients

  • 2 tbsp olive oil
  • 1 shallot
  • 8 ounces (227 g) chanterelles (or other mushrooms)
  • 12 slices of bread
  • 12 slices aged goat cheese
  • chives

Recipe

  1. Slice shallot in rings.
  2. Heat olive oil on medium.
  3. Cook shallots for 3 minutes (soft).
  4. Add mushrooms, cook for 7-10 minutes (juices evaporated).
  5. Season with salt and pepper.
  6. Toast crostinis.
  7. Top with goat cheese, add mushroom mixture, sprinkle with chives.
