Dumplings

22 dumplings. A meal serving is 5-6 dumplings (me-Matthaeus).

Experience

  • made in once in late 2021, with leftovers of beef slices. It was delicious.
  • 30/01/2022: really tasty and simple to make. Cut the dough in 22 chunks, it makes big dumplings, and 22 tbsp of meat mix. But I have to say, I’m not sure I love the mix of beef and chicken ground meat. I think I prefered it when it was pure beef.

Ingredients

Dough

  • 2 1/2 cups all purpose flour
  • 1/2 tsp yeast
  • 2 tsp sugar
  • 3/4 cup and 2 tbsp warm water

Filling

  • 1/2 lb (8 oz, 227 g) ground beef
  • 1/2 lb (8 oz, 227 g) ground chicken
  • 3 cloves garlic
  • 1 small chunk ginger
  • 2 green onions
  • 1 tbsp mirin (rice wine)
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/4 tsp black pepper 

Assembly

  • neutral cooking oil (by steps of 3 tbsp)
  • water (by steps of 1 cup)
  • black sesame seeds
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp chili oil

Recipe

Dough

  1. Stand-mixer: flour, yeast and sugar, mix. Pour warm water and mix on a medium speed 3-4 minutes.
  2. Take out the dough, wipe the bowl with a bit of oil, place the dough back, cover with plastic.
  3. Rise for 1 h 30 min.

Filling

  1. Combine all filling ingredients, mix. Divide in 1 tbsp portions (roughly 22), place in an ice cube tray or something: to know how many dumplings to make.
  2. I have frozen the dough balls.

Assembly

  1. Divide dough into as many pieces as there are filling portions (roughly 22).
  2. Dust flour as needed to not stick. Roll each piece into a small ball. At this stage I put the balls in a tupperware closed in the fridge overnight.
  3. Roll out each ball into a circle, then the edges of the circle thinner.
  4. Place filling ball in the center, wet edges of dough, fold dough prettily into the center (watch video).
  5. 3 tbsp oil in a pan. Place dumplings, rubbing their bottom in the oil, keeping some space in between.
  6. Rest 15 minutes in the pan.
  7. Fill 1 cup water around dumplings, or until 3/4 covered. Cover pan with wooden plate, bring to a boil, then reduce to a simmer.
  8. Cook 10 minutes or until liquid evaporates and bottom is crispy and caramelized. Sprinkle dumplings with black sesame seeds.
  9. Assemble sauce.
  10. Serve.
