Fruit shortbread

09/2024: faite pour la petite fete de mariage qu’on a fait au Weizmann (pause cafe), et ensuite pour l’anniversaire de Gabriel.
I reduced the sugar with the fruits and crumble, I find it too sweet. Maybe half the crumble and don’t put on the shortbread?

Ingredients

Shortbread

  • 1/2 cup (113g) butter, soft
  • 1/4 cup (50g) sugar
  • (1 tsp vanilla extract)
  • 1/4 tsp salt
  • 1 cup (120g) flour

Fruit slices

  • 450g fruits (for ex. 3 apples or 6 prunes)
  • 2 tbsp flour
  • 1 tsp cinnamon (optional)
  • 1/4 tsp nutmeg

Crumble

  • 1/2 cup (60g) flour
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (57g) butter, soft

Recipe

  1. Oven: 150C. Line 20x20cm dish with parchment paper covering bottom and sides. Shortbread
  2. Beat butter (113g) for 5 min to cream. Add sugar (50g), vanilla (1tsp), salt (1/4tsp), mix. Add flour (120g), mix.
  3. Press into dish. Bake for 15min (I did 25min every time).
    Fruits
  4. Slice fruits into thin slices. Mix with flour and spices.
    Crumble
  5. Mix butter (57g), brown sugar (100g), flour (60g) until crumbles.
  6. Spread half of crumble dough onto shortbread. Layer fruits, it will be several layers. Crumble the other half over.
  7. Bake at 180C for 30 min, or 45min.
