Matthaeus’s salad

Ingredients

  • 200 g rucola
  • 200 g feta cheese
  • 200 g bacon cubes
  • 1 small ciabatta bread
  • 1/2 cup olives
  • 250 g cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp oregano
  • 1 garlic clove
  • pinch of sugar
  • 30-40 g butter
  • salt and pepper
  • italian herbs (herbes de provence)

Recipe

  1. Wash rucola. Dice tomatoes. Crumble feta.
  2. Cook bacon cubes, set aside.
  3. Cube the bread and grill in the pan in butter.
  4. Press the garlic. Mix olive oil, balsamic vinegar, oregano, sugar, garlic. Season.
  5. Mix tomatoes with salt and italian herbs, a dash of olive oil, Toss.
  6. Add olives, bacon and feta, toss.
  7. Add rucola, bread and dressing.
