Citrus curd topping (optional)

I don’t like the whipped cream topping, it hides the taste of the tart, but the citrus curd is delicious by itself.

  1. Simmer a pot of water.
  2. In a large bowl that can fit on the pot without touching the water , mix lemon juice, orange juice, eggs, yolks and orange zest.
  3. Gradually add sugar while whisking.
  4. Separately, cube the butter.
  5. Add bowl on pot to steam it. Whisk constantly until it reaches 180 °F = 82 °C (10-12 min).
  6. Remove from heat and wait until temperature reaches 140 °F = 60 °C, stirring always.
  7. Add the butter piece by piece and whisk to incorporate. Consistency thickens. Chill in refrigerator.
  8. To make topping: whip 1 cup heavy cream with 2 tbsp sugar, fold into 1 cup citrus curd.
