Chicken fajitas

Experience

  • We make this regularly at home.
  • On 07/01/2022, we made a variant: chicken breast rubbed with red spices, cooked in quite some oil. Had a beautiful caramelized outside and moist inside. 1 oignon, 1 paprika, in a pan with oil, toss until caramelize, outside of the heat add garlic pressed. Made with salad, cherry tomatoes, taco sauce (too acidic), sour cream, coriander. It was really good, only lacked some acid and heat. Perfect portion for 4. I still do not know how to roll a burrito.

Ingredients

Marinade 1

  • 2 tbsp lime juice
  • 2 tbsp oil
  • 1-2 garlic cloves
  • 1 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp ground chili (was not too hot)

Marinade 2

  • 1/2 tbsp chili powder
  • 1/2 tbsp cumin (ground)
  • 1 tsp garlic powder
  • 1/2 tsp paprika, smoked sweet
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

Rest of ingredients

  • 1 1/2 pounds (650 g, 3) chicken breasts
  • 2/3 bell peppers
  • 1 red onion or regular onion
  • cilantro (optional)
  • toppings: 8 tacos, grated cheese, sour cream, fresh diced tomatoes, salad.

Recipe

Marinade 1

  • Mince garlic (1-2 garlic cloves). Combine lime juice (2 tbsp), oil (2 tbsp), garlic, cumin (1.5 tsp), salt (1 tsp), chili (0.5 tsp) (optional cilantro). Add chicken, marinate for 30 min.

Marinade 2

  • Mix dry marinade: chili (0.5 tbsp), cumin (0.5 tbsp), garlic powder (1 tsp), paprika (0.5 tsp), oregano (0.5 tsp), salt (0.5 tsp), pepper (0.25 tsp).
  • Rub on chicken.

Recipe

  • Heat pan and olive oil. Cook chicken (8 min per side). Rest.
  • Slice onion (1) finely and peppers (3) a little thicker.
  • Cook peppers and onions, tossing frequently (5 min).
  • Slice chicken. Add back to peppers and onions, add a squeeze of lime juice, toss. Turn off heat.
  • Warm tortillas in microwave.
  • Tortilla, sour cream, chicken, onion and peppers, grated cheese, fresh tomatoes and salad. Close.
