Ingredients
- 1 onion
- 1 red pepper
- 2 garlic cloves
- 1 tbsp oil
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 500g minced beef
- 300ml beef stock (1 cube, or any stock)
- 400g can chopped tomatoes
- ½ tsp dried marjoram
- 1 tsp sugar
- 2 tbsp tomato purée
- 410g can red kidney beans
Recipe
- Dice onion, red pepper and chop garlic.
- Pot + 1 tbsp oil + medium heat.
- Cook onion until translucent (5 min).
- Add garlic, red pepper, chili powder, paprika, cumin. Cook 5 min stirring.
- Turn up the heat, add the beef, break it up with a spatula, fry for 5 min (should not be a stew, should really fry).
- Add stock, choppd tomatoes, marjoram, sugar, tomato purée. Season with salt and pepper.
- Simmer gently, covered for 20 minutes. Stir occasionally so that it doesn’t attach.
- Add stock at any point if it dries.
- Add beans. Simmer uncovered for 10 minutes.
- Let stand away from the heat for 10 minutes.
