Blueberry muffins

Made this in April 2021 in Lyon, for Maman, because she felt like having blueberry muffins. When it was just the two of us, and Papa was in the hospital, and we visited him every day. I miss him like I can’t describe.
I also used it to make the rainbow cake for Clairelyne. It makes a great cake basis.

Made in septembre 2025 to finish stocks in Israel, with sour cherries. It’s good, but I find also a bit blend. Maybe the streusel deserves something extra

Ingredients

Muffin

  • 2 + 1/2 cups (315g) flour
  • 1 tbsp (13g) baking powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (2g) salt
  • 1/2 cup (114g) butter, melted and cooled
  • 1 cup (200g) sugar
  • 2 eggs
  • 1 cup (250ml) milk (or buttermilk)
  • 1 tbsp (15ml) vanilla extract
  • 1 & 1/2 cups (230g) blueberries

Streusel

  • 1/4 cup (50g) sugar
  • 1 tbsp (8g) flour
  • 1/8 tsp cinnamon
  • 2 tsp (10ml) butter, melted

Recipe

  1. Oven = 220 ºC = 425 ºF.
  2. Whisk melted butter with sugar. Add eggs, milk, and vanilla. Mix.
  3. Add flour, baking powder, baking soda and salt. Stir with spatula.
  4. Fold in blueberries light.
  5. Streusel : mix sugar, flour, and cinnamon. Stir in butter.
  6. Grease muffin cups. Fill to the top. Sprinkle with streusel.
  7. Bake for 5 minutes at 220 ºC, then reduce to 190 ºC = 375 ºF and bake for 15 minutes.
