Lemon squares

Ingredients

Shortbread base

  • ½ cup (113 g) butter (if unsalted add 1/4 tsp salt)
  • ¼ cup (30 g) powdered sugar
  • 1 cup (140 g) flour
  • 1 pinch salt

Lemon filling

  • 2 large eggs
  • 1 cup (less, 190 g) white sugar
  • ½ teaspoon baking powder
  • 3 tablespoons lemon juice
  • 1 pinch salt
  • zest of 1/2-1 lemon (1/2 – 1 tablespoon)

Recipe

  1. Oven: 180°C = 350°F
  2. Beat medium speed butter and powdered sugar until combined. Add flour and salt and beat until a soft dough forms.
  3. Prepare a baking pan, butter and flour or line with parchment paper.
  4. Pat dough evenly at the bottom. Bake 18-20 minutes (if thin, less, 13 min). Remove from oven.
  5. Beat the eggs, sugar, baking powder, fresh lemon juice, pinch of salt, zest. Pour over baked base and cook 20-25 minutes.
  6. Refrigerate, then dust with powdered sugar and cut.
