Banana bread

This banan bread is a tried and tested recipe. I didn’t find any better out there.

Experience

  • 11/05/2020: 1/2 cup sugar (instead of 1 cup), 2 tbsp sour cream + 2 tbsp milk. It was dry and a bit tasteless. Don’t recommend.
  • 03/11/2020: made them in mini format, baked for 25 min. Nice, but did not have the nice crust that I like on the banana bread.
  • 14/08/2021: 3/4 cup sugar (and thick cream instead of sour) made for really good mini banana breads (12)
  • 24/02/2024: for the microbakery, one cake ie half this recipe weighs in theory 560, in reality less, more like 515

Ingredients

  • 2 cups (270g) flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (145g) sugar
  • 3 bananas
  • 1/2 cup (113 g) butter, melted
  • 2 eggs
  • 1/4 cup (50g) sour cream
  • 2 tsp vanilla extract
  • 1 cup (80g) walnuts

Recipe

  1. Oven: 350 °F = 180 °C.
  2. Mash bananas.
  3. Combine sugar, bananas, butter, eggs, sour cream, vanilla extract (I often skip the vanilla extract).
  4. Fold in flour, baking soda, salt.
  5. Toast walnuts, chop, fold in. (I don’t always add them)
  6. Bake 50 minutes.
