Experience

  • made for Christmas and Sylvester 2021, and it was loved. 2/3 quantities but with 2 tsp cinnamon. Baked for an extra 10 minutes, and it was still soft inside. In another recipe from a Advent’s cookies book of Maman, the dough had some kirsch, I let the cookies dry for 12 hours before baking, then baked at 150°C or so (the recipe said 240°C for 5min). They were more crispy, I liked it a lot too.

Ingredients

  • 250 g powdered sugar + more for dusting
  • 3 egg whites
  • 2 tsp zimt cinnamon, maybe more
  • 350 g almond powder with skin

Recipe

  1. Oven: 125 °C.
  2. Beat up the egg whites with a pinch of salt. Sift the powdered sugar then fold in the egg whites.
  3. Put aside 8 tbsp of this mixture for covering the cookies.
  4. Add the almond powder and cinnamon to the main quantity of egg whites.
  5. Roll out the dough with powdered sugar instead of flour, 0.5 cm thick.
  6. Cut out shapes with a star cookie cutter.
  7. Brush the white topping on each star.
  8. Bake for 15 minutes (I actually did 25 min, they started browning a tiny bit but barely).
